Pork Chop Milanese

A traditional and hearty Italian dish, our Pork Chop Milanese is breaded and pan-fried to golden perfection, resulting in a tender and juicy interior encased in a crispy exterior. The delicate addition of roasted green apples and grapes elevates the main course with sweet and tangy flavors. Crumbles of feta cheese bring a creamy tang that contrasts beautifully with the peppery bite of freshly harvested arugula with red wine vinaigrette, adding a rich, fruity finish.

Alaskan Halibut

Featuring the freshest catch of the day, our Wild-Caught Alaskan Halibut is Pan-seared with skin-on to lock in the natural flavors and cooked to a succulent finish with extra virgin olive oil. A velvety smooth cauliflower puree is served alongside, providing a luxurious and comforting base to the dish. The green beans and cherry tomatoes add a vibrant splash of color and flavor. A sprinkle of capers and a garnish of fresh basil leaves add an aromatic twist to the dish, making it an unforgettable experience for your senses.

Wine Pairing

The succulent, golden Pork Chop Milanese finds its perfect companion in our selected red wines. Each provides a distinctive balance and harmony to the dish:

  1. Sangiovese – Celebrated as the king of Italian red wines, the Sangiovese is an elegant match for our Milanese pork chop. Its vibrant acidity and medium to full-bodied profile beautifully contrast the richness of the pork. At the same time, the wine’s classic cherry, red plum, and floral flavors subtly complement the dish’s fruity elements.
  2. Pinot Noir – This wine’s delicately light body and bright acidity seamlessly blend with the dish’s complex flavors. With its characteristic notes of red berries, clove, and subtle earthiness, the Pinot Noir adds depth to the pork chop, enhancing its flavors and leaving a lingering, mouthwatering finish on the palate.
  3. Tempranillo – Known for its bold and robust flavor, Tempranillo is a compelling pairing for the pork Milanese. Its robust structure, pronounced tannins, and flavors of plum, tobacco, and leather stand up to the hearty pork, while its underlying spice notes echo the tang of the dish’s accompaniments.

Each wine pairing elevates the dining experience, offering an unforgettable exploration of flavor profiles and the beauty of Italian cuisine.

As a companion to our Pan-seared Wild-Caught Alaskan Halibut, our hand-selected white wines each serve to elevate the ocean-fresh flavors of the dish:

  1. Garganega – Hailing from the romantic vineyards of Italy, this predominantly Venetian varietal offers crisp acidity and a well-rounded body. With its delicate notes of citrus, white peach, and subtle almond, the Garganega harmonizes beautifully with the flaky halibut and enhances the creamy undertones of the cauliflower puree.
  2. Pinot Grigio – This versatile and widely appreciated wine is known for its light, refreshing character. Its mineral-rich profile, combined with hints of green apple, pear, and a touch of honey, provides a delightful contrast to the richness of the fish. The subtly sweet undertones of Pinot Grigio playfully complement the halibut, providing a balanced, unforgettable flavor experience.
  3. Sauvignon Blanc – Famous for its vibrant acidity and exuberant citrus and tropical fruit flavors, Sauvignon Blanc adds an energetic lift to the halibut. Its characteristic herbaceous notes perfectly match the dish’s fresh basil garnish and green beans, creating an aromatic synergy that will leave your palate invigorated.

Each of these wines, in their unique ways, completes the sensory journey of savoring our pan-seared halibut, adding an extra layer of complexity and enjoyment to your dining experience.
